Today’s recipe is for one of my absolute favorite dips – Cheesy Spinach & Artichoke Dip.
Whether you are looking for a yummy dip to make for a party, a family gathering, or just for something to snack on … my Cheesy Spinach & Artichoke Dip is one that will never disappoint.
This recipe is easy peasy to make. Just toss all the ingredients together and bake. If you are short on time, you can even prepare this dip ahead of time and refrigerate. Just pop it in the oven and bake just before the guests arrive so it’s hot and ooey gooey good.
Cheesy Spinach & Artichoke Dip
Prep time: 10 minutes Cook time: 20-25 minutes
1 – 8 oz jar marinated artichoke hearts, drained & cut into pieces (reserve liquid in separate container)
1 – 10 oz package frozen spinach, thawed & drained
1/2 cup mayonnaise
1/2 cup sour cream
1 1/2 cups Italian style six-cheese blend
(Mozzarella, Provolone, Asiago, Parmesan, Romano and Fontina cheeses)
Paprika for garnish
Preheat oven to 350 degrees. Thaw spinach and drain off any liquid.
Cut the artichoke hearts into bite size pieces.
Combine all the ingredients and mix well. If the mixture seems thick, add a small amount of the reserved artichoke liquid.
Pour into a greased casserole dish and sprinkle with extra cheese and paprika. Bake for 20-25 minutes or until golden brown and bubbly.
Let cool a bit before serving.
Serve your Cheesy Spinach & Artichoke Dip with crackers, tortilla, pita or bagel chips.
