If you have followed my blog for very long, you know that I absolutely LOVE Mexican food of any kind. This recipe for my amazing friend’s Super Simple Crock Pot Shredded Mexican Pork is definitely no exception!
This pork will melt in your mouth, and makes enough for at least a couple of meals. Serve it on soft tortillas with Knorr Spanish Rice, shredded cheese, sour cream and The BEST Guacamole EVER ~ so, so yummy and super darn easy. It also makes fantastic nachos and oven-baked enchiladas for a second meal.
And … the bonus of this recipe is that it is one of those that you literally put in the crock pot in the morning, check it in the late afternoon, and serve it at supper time. :)
What busy mom doesn’t like that, right?
Super Simple Crock Pot Shredded Mexican Pork
1- 2 lb. pork roast
1 can Old El Paso green enchilada sauce with chiles
1 can Old El Paso red enchilada sauce
2 cans refried beans
Place pork in crock pot. Pour enchilada sauce and refried beans over top, cover and cook on high for 5-6 hours or until meat is fork tender. Shred pork and stir. Cook on low for an additional 1-2 hours. Serve on soft tortillas with Knorr Spanish Rice, shredded cheese, sour cream and The BEST Guacamole EVER .
(This pork also makes fantastic nachos and oven-baked enchiladas for a second meal.)
